Who is Aldo Parducci?
The Parducci farm, like most of our farmers, is a family run operation. The farm sits 1200 meters above sea level in the foggy, misty highlands of El Salvador. His coffee beans are hand-picked and meticulously cared for in ‘shade grown’ areas on the mountainside. The result is the highest quality coffee while minimizing the negative impact of picking the cherries on the plant itself.
Aldo Parducci was facing many “roadblocks” while doing commercially wash-processed coffee. One of the Farmers which are part of the Bonaverde marketplace, Rodolfo Ruffatti, met Aldo Parducci and helped his family to overcome the obstacles in production by providing the knowledge and expertise for how to separate varieties.
Fast forward and the ‘Pacamara natural’ made it into the cup of Excellence. Parducci is just 32 years old and is proudly part of the new generation of El Salvador farmers using new techniques to produce coffee. This coffee has sweet notes and a well-balanced fruity acidity that still shines in the aftertaste. You will notice an array of flavors such as cherries, plums, bacon, butter, and red berries.
